A spirit that stands for neutrality; creating it to tell our story and reflect our origins was one of the biggest challenges we have ever faced.

Grape pomace (waste products like skins, seeds, pulp, and juice) is used and rectified to produce our unique vodka. We then simply filter the vodka through activated carbon to ensure purity and to make sure we retain the regional characteristics of the Adelaide Hills, as well as a touch of character that sets our drink apart and gives it subtle notes of citrus and floral tones.

Vodka – for most just a fleeting thought – has become a reflection of what we do at 78 Distillery. For a spirit that stands for neutrality, creating it to tell our story and reflect our origins was one of the biggest challenges we have ever overcome.

The first important decision was to convey our genuine Australian signature, rooted in the Adelaide Hills. To achieve this, we sought regional characteristics and raw materials that tell the story of our terroir. For us, the Adelaide Hills is one of Australia's best wine and fruit growing regions globally, with grapes and apples being the predominant crops.

When selecting the raw material, we decided to utilize the waste products of the wine industry, thereby giving them a meaningful second life. Grape pomace (waste products from skins, seeds, pulp, and juice) is used and processed to produce our unique vodka. We then simply filter the vodka through activated carbon to ensure its purity and to make sure that the regional characteristics of the Adelaide Hills, as well as a touch of character that sets our drink apart and gives it subtle notes of citrus and floral aromas, are retained.

To allow the subtle notes of citrus and floral aromas to develop, we must ensure that our water quality is pure and consistent. Any irregularity in the salt and mineral content (or other undesirable substances) in the water would mask the aromas and flavors we want to capture.

To ensure the quality of the spirit, we use a closed-loop water system that ensures the water quality is exceptional and consistent, and also has the added benefit of allowing wastewater to be reused without discharging it into the sewer system.
