The first new addition to Four Pillars' core range since 2015 was realised after a visit to the Cobram Estate in northern Victoria.
During the harvest, Cam McKenzie realised that olive oil could be used as a botanical. After some experimentation, olive tree leaves and about one litre of fresh olive oil from Cobram Estate were added to the still.
The oil is not what you would buy in a supermarket. It is made from two Spanish olive varieties - Picual and Hojiblanca - and one Italian variety - Coratina. It also contains 250 g of local bay leaves and rosemary, as well as more coriander and significantly more juniper than Rare Dry.
Other botanicals include lemon myrtle, fresh local lemons, macadamia and grapefruit.
