Cascara is extracted from the unused husk of the coffee bean from the lush hinterland of the northern rivers and enhances the flavor of this smooth-drinking gin.

Cascara is the sun-dried outer skin of green coffee beans. Although derived from coffee beans, it does not smell of coffee; the aroma is instead that of an earthy dried bark with the taste and sweetness of freshly dried sultanas and raisins. This is the dried fruit note that is imparted to the Cascara Gin.

Cascara adds earthy notes of dried fruit to create a warmer, richer flavor. A touch of coffee, a touch of genius. Due to its sweet berry and fruit notes, Cascara is described as a gateway gin and features aromas of currants, raisins, citrus fruits, and vanilla with a crisp, delicately floral finish.

Simply drink neat on the rocks or mixed with a grapefruit tonic.

Juniper sourced from Macedonia has a freshness characteristic of pine. It evokes memories of flush, dense pine forests and has a forward-facing note.

Coriander seeds possess a woody, forward-facing fragrance that releases a sweet-peppery note when broken, which contrasts with the spicy notes the seeds add to the gin.

Madagascan vanilla beans have a sweet aroma and a rich vanilla flavor that gives the gins a subtle sweetness.

Australian lemons are sourced directly from trees in the region. They form the citrus backbone of the gin and fit perfectly with the rest of the botanical family to create a balance between sweetness and spice.

Native Strawberry (Olida Gum) has flavors of berries and hibiscus and provides the sweet, forward-facing flavor notes of the Cascara Gin. These emerge before the juniper to create a more dried-fruit forward gin, with the juniper and spices coming through behind the sweetness.
